  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 2 tablespoons white miso paste
  • Pinch of sea salt
  • For the Layers:
  • 3 ripe bananas, sliced
  • 1 box vanilla wafer cookies
  • 2 cups whipped cream
  • Optional Garnishes:
  • Crushed vanilla wafers
  • Banana slices
  • Caramel drizzle
  • Flaky sea salt
  • Chopped toasted pecans
  • Chocolate shavings

Instructions

  1. Whisk together the milk, heavy cream, sugar, cornstarch, and egg yolks in a saucepan.
  2. Cook over medium heat, whisking constantly until thickened.
  3. Remove from the heat and stir in the butter and vanilla. Let cool slightly.
  4. Prepare the caramel by melting the sugar until amber, then whisk in the butter, heavy cream, white miso, and sea salt until smooth.
  5. Allow the caramel to cool slightly.
  6. Slice the bananas into even rounds.
  7. Layer vanilla wafers, pudding, bananas, miso caramel, and whipped cream in a serving dish or dessert cups.
  8. Repeat the layers, finishing with whipped cream.
  9. Cover and refrigerate for at least 4–6 hours or overnight.
  10. Garnish with crushed wafers, caramel drizzle, banana slices, pecans, or chocolate shavings before serving.
