A creamy and flavorful Mexican corn salad made with sweet corn, lime, cheese, and spices, perfect as a quick and delicious side dish.

Ingredients

  • 5 cups corn kernels (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 3 tablespoons lime juice
  • 1 teaspoon chili powder
  • 2 cloves garlic, minced
  • 1/3 cup fresh cilantro, chopped
  • 1 small jalapeño, diced (optional)
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat.
  2. Add corn and cook for 8–10 minutes until slightly charred.
  3. Remove from heat and let cool slightly.
  4. In a bowl, mix mayonnaise, sour cream, lime juice, garlic, and chili powder.
  5. Add corn to the bowl and mix well.
  6. Fold in cotija cheese, cilantro, and jalapeño if using.
  7. Season with salt and pepper to taste.
  8. Mix gently and serve.
