Mexican casserole is a cheesy, hearty baked dish made with layers of seasoned meat, beans, vegetables, and tortillas or chips. It’s an easy and flavorful comfort meal perfect for family dinners or meal prep.

  • 1 lb ground beef or shredded chicken
  • 2 cups crushed tortilla chips or 6 small tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans or kidney beans, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef or chicken over medium heat until fully cooked.
  3. Add chopped onion and garlic, cooking until softened.
  4. Stir in taco seasoning, diced tomatoes, beans, corn, and water. Simmer for 5–7 minutes.
  5. Mix in sour cream if using, and stir until combined.
  6. In a baking dish, add a layer of tortilla chips or tortillas.
  7. Spread a layer of the filling mixture over the base.
  8. Sprinkle shredded cheese on top.
  9. Repeat layers until all ingredients are used, finishing with cheese.
  10. Bake for 25–30 minutes until cheese is melted and bubbly.
  11. Let rest for 5–10 minutes before serving.

  • Use tortillas for a softer texture or chips for added crunch.
  • Do not add too much liquid to avoid a soggy casserole.
  • Let the casserole rest before serving to help it set.
  • Store leftovers in an airtight container for up to 4 days.
