Matcha Strawberry Cookies are soft, chewy, and beautifully marbled cookies combining earthy matcha with sweet strawberry flavor for a unique and bakery-style treat.

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup butter (softened)
  • 1 large egg
  • 1 tablespoon matcha powder
  • 1/2 cup freeze-dried strawberries (crushed)
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Cream butter and sugar together until light and fluffy.
  3. Add the egg and mix until fully combined.
  4. Gradually add flour and baking powder, mixing until a soft dough forms.
  5. Divide the dough into two equal portions.
  6. Mix matcha powder into one portion and crushed strawberries into the other.
  7. Take small portions of each dough, press together, and roll into balls to create a marble effect.
  8. Place on baking tray and slightly flatten each ball.
  9. Bake for 10–12 minutes until edges are set.
  10. Cool on tray for a few minutes, then transfer to a rack to cool completely.

  • Chill dough if it becomes too soft to handle.
  • Do not overmix to keep cookies soft and tender.
  • Use culinary-grade matcha for best flavor and color.
  • Freeze-dried strawberries work better than fresh ones for texture.
