  • 1 1/4 cups all-purpose flour
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 1/2 cups mango puree
  • 3 large egg yolks
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 6 tablespoons unsalted butter
  • Fresh mango slices for garnish
  • Toasted coconut for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine flour, coconut, sugar, and salt.
  3. Cut in butter until crumbly.
  4. Press mixture into a tart pan.
  5. Bake for 15–18 minutes until golden.
  6. Cool completely.
  7. Whisk mango puree, eggs, yolks, sugar, lime juice, and zest.
  8. Cook over medium-low heat, stirring constantly until thickened.
  9. Remove from heat and whisk in butter.
  10. Strain the curd through a fine mesh sieve.
  11. Pour curd into the cooled crust.
  12. Refrigerate for at least 4 hours.
  13. Garnish with mango slices and toasted coconut.
  14. Slice and serve.
