Mango Chickpea Salad is a fresh healthy salad made with sweet mango, protein-rich chickpeas, crisp vegetables, herbs, and a zesty lime dressing. Perfect for lunch, meal prep, picnics, or light dinners.

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 cups ripe mango, diced
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch chili flakes optional

Instructions

  1. Dice mango, cucumber, bell pepper, and onion.
  2. Drain and rinse chickpeas well, then pat dry.
  3. Whisk lime juice, olive oil, honey or maple syrup, salt, pepper, and chili flakes.
  4. Add chickpeas, mango, vegetables, and cilantro to a large bowl.
  5. Pour dressing over salad.
  6. Toss gently until evenly coated.
  7. Serve immediately or chill 20 to 30 minutes before serving.

Notes

  • Use ripe but firm mango for best texture.
  • Use maple syrup for vegan version.
  • Add avocado just before serving.
  • Store refrigerated up to 3 days.
