Loaded Potato Salad is a creamy side dish made with tender potatoes, bacon, cheddar cheese, green onions, and rich dressing inspired by loaded baked potatoes.

Ingredients

  • 3 pounds potatoes, cubed
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 cups cheddar cheese, shredded
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup green onions, sliced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Boil potatoes in salted water until fork tender, then drain well.
  2. Cool slightly while still warm.
  3. Mix mayonnaise, sour cream, mustard, salt, pepper, and garlic powder.
  4. Add potatoes to bowl and gently fold with dressing.
  5. Stir in bacon, cheese, and green onions.
  6. Chill at least 1 hour.
