  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 3/4 cup granulated sugar (for filling)
  • 1/3 cup fresh lime juice
  • 1 tbsp lime zest
  • 1/2 cup heavy cream or milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, butter, and sugar until crumbly.
  3. Press mixture into tart pans to form crust.
  4. Bake crust for 10–12 minutes until lightly golden.
  5. In a bowl, whisk eggs and sugar until smooth.
  6. Add lime juice, lime zest, and cream, then mix well.
  7. Pour filling into pre-baked crusts.
  8. Bake for 15–20 minutes until edges are set.
  9. Cool at room temperature, then refrigerate for 2–3 hours.
  10. Serve chilled with optional toppings.
