Ingredients

  • 6 cups rice cereal squares (such as Chex)
  • 1 1/2 cups white chocolate chips
  • 1/4 cup unsalted butter
  • 1 tablespoon lemon zest or 1 teaspoon lemon extract
  • 1 1/2 cups powdered sugar

Instructions

  1. Place the cereal in a large mixing bowl.
  2. In a microwave-safe bowl, melt white chocolate chips and butter in 20–30 second intervals, stirring until smooth.
  3. Stir in lemon zest or lemon extract until fully combined.
  4. Pour the melted mixture over the cereal and gently mix until evenly coated.
  5. Transfer the coated cereal into a large zip-top bag or container with powdered sugar.
  6. Shake well until all pieces are fully coated.
  7. Spread onto a baking sheet and let cool for 15–20 minutes until set.
