  • 1 lb large shrimp, peeled and deveined
  • 1 bunch fresh asparagus, trimmed
  • 4-5 cloves garlic, minced
  • 2-3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons butter or olive oil
  • Salt and black pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh parsley (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Optional: 1/4 teaspoon paprika or splash of white wine

Instructions

  1. Pat shrimp dry with paper towels to remove moisture.
  2. Trim woody ends from asparagus.
  3. Heat 1 tablespoon butter or olive oil in a large skillet over medium heat.
  4. Add asparagus and cook for 4-5 minutes until tender-crisp, then remove and set aside.
  5. Add remaining butter or oil to the skillet.
  6. Sauté garlic for about 30 seconds until fragrant.
  7. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque.
  8. Return asparagus to the skillet.
  9. Add lemon juice and lemon zest.
  10. Toss everything together and cook for another 1-2 minutes.
  11. Season with salt, pepper, and red pepper flakes if desired.
  12. Garnish with parsley and Parmesan cheese.
  13. Serve immediately while hot.
