Lemon Chicken Orzo Soup is a bright and comforting soup made with tender chicken, delicate orzo pasta, fresh vegetables, herbs, and a refreshing touch of lemon in a flavorful broth.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 pound boneless chicken breast or chicken thighs, cut into bite-sized pieces
  • 6 cups chicken broth
  • 3/4 cup orzo pasta
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 cup fresh spinach (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery, then cook for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add chicken broth and bring the mixture to a gentle simmer.
  5. Add the chicken pieces and cook for about 10–12 minutes until fully cooked.
  6. Stir in the orzo pasta and cook according to package instructions until tender.
  7. Add fresh spinach if using and cook for 1–2 minutes until wilted.
  8. Stir in lemon juice, lemon zest, parsley, salt, and pepper, then adjust seasoning before serving.

Notes

  • Use fresh lemon juice for the best bright flavor.
  • If preparing ahead, cook the orzo separately to prevent it from becoming too soft.
  • Add extra vegetables like zucchini or peas for more variety.
  • The soup can be stored in the refrigerator for up to 3 days.
  • Freeze the soup without the orzo for better texture when reheating.
