12 oz rotini or penne pasta
2 cups grilled chicken, sliced
1 1/2 cups cherry tomatoes, halved
1 cup fresh mozzarella, sliced or cubed
1/4 cup fresh basil, chopped
3 tbsp olive oil
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 cup chicken sausage, sliced (optional)
Instructions
Cook pasta in salted boiling water until al dente.
Drain and rinse under cold water, then set aside to cool.
Grill the chicken until fully cooked, then slice into pieces.
Prepare tomatoes, mozzarella, and basil.
In a large bowl, layer pasta, chicken, tomatoes, mozzarella, and basil.
Repeat layers as needed for presentation.
Drizzle olive oil and add garlic, salt, and pepper.
