Juicy Street Corn Pasta Salad is a creamy and flavorful pasta dish inspired by street corn, made with tender pasta, sweet corn, fresh vegetables, and a tangy dressing. Perfect for picnics, barbecues, and family gatherings.

  • 12 oz rotini pasta
  • 1 1/2 cups corn kernels (fresh, grilled, or thawed frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 bell pepper, diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or plain yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the rotini pasta according to the package instructions until al dente.
  2. Drain the pasta and rinse under cold water to cool completely.
  3. If using fresh corn, cook it briefly and remove the kernels from the cob.
  4. In a large bowl, combine the cooled pasta, corn, cherry tomatoes, red onion, bell pepper, and chopped cilantro.
  5. In a separate bowl, whisk together mayonnaise, sour cream or yogurt, lime juice, garlic powder, paprika, salt, and black pepper.
  6. Pour the dressing over the pasta mixture.
  7. Gently toss until all ingredients are evenly coated.
  8. Cover and refrigerate for 30–60 minutes to allow the flavors to blend.
  9. Stir again before serving and adjust seasoning if needed.
