  • 1 pound ground chicken or beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan-style cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 3/4 cup small pasta (such as acini di pepe or orzo)
  • 3 cups fresh spinach

Instructions

  1. In a bowl combine ground meat, breadcrumbs, egg, parsley, cheese, garlic powder, salt and pepper.
  2. Mix gently and roll into small bite-sized meatballs.
  3. Heat olive oil in a large pot over medium heat and sauté onion, carrots and celery for about 5 minutes.
  4. Add chicken broth and bring the soup to a gentle simmer.
  5. Add the prepared meatballs and cook for about 8–10 minutes.
  6. Stir in the small pasta and cook until tender according to package instructions.
  7. Add fresh spinach and cook for 1–2 minutes until wilted.
  8. Taste and adjust seasoning, then serve warm with extra parsley if desired.

Notes

  • Make the meatballs small so they cook quickly and evenly.
  • If preparing ahead, cook pasta separately to prevent it from becoming too soft.
  • The soup can be refrigerated for up to 3 days.
  • Freeze the soup without pasta for better texture when reheating.
  • Add extra greens or vegetables for additional nutrition.
