  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery, then cook for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a gentle boil.
  5. Add the dried thyme, oregano, salt, and black pepper.
  6. Stir in the small pasta and allow it to cook according to package instructions.
  7. Add fresh spinach if using and cook for another 2 minutes until wilted.
  8. Finish the soup with chopped parsley and a splash of lemon juice, then serve warm.

Notes
