  • 3 cups vegetable or chicken broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup Parmesan optional
  • 1 tablespoon butter optional

Instructions

  1. Set Instant Pot to sauté mode.
  2. Add oil or butter and cook onion until softened.
  3. Add garlic and cook 30 seconds.
  4. Stir in crushed tomatoes, tomato paste, broth, sugar, salt, pepper, basil, and oregano.
  5. Seal lid and cook on high pressure for 10 minutes.
  6. Allow natural release for 10 minutes.
  7. Quick release remaining pressure carefully.
  8. Blend soup until smooth.
  9. Stir in cream, Parmesan, or butter if desired.
  10. Taste, adjust seasoning, and serve hot.
