A refreshing and colorful Honey Lime Rainbow Fruit Salad made with a medley of fresh fruits and a naturally sweet honey lime dressing. Perfect for summer gatherings, brunches, or healthy snacking.

Ingredients

  • 1 lb fresh strawberries, chopped
  • 1 lb chopped fresh pineapple
  • 12 oz fresh blueberries
  • 12 oz red grapes, sliced into halves
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges (fresh or 1 can drained)
  • 2 bananas, sliced (optional)
  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice

Instructions

  1. Wash and dry all fruit thoroughly.
  2. Chop strawberries, pineapple, kiwi, and mandarin oranges. Halve grapes. Leave blueberries whole. Slice bananas just before serving.
  3. In a small bowl, whisk together honey, lime zest, and lime juice until well combined.
  4. In a large mixing bowl, combine all prepared fruit (except bananas if making ahead).
  5. Drizzle the honey lime dressing over the fruit and gently toss to coat evenly.
  6. Add banana slices if using, just before serving.
  7. Serve immediately or refrigerate for up to 30 minutes before serving.

Notes

  • Chop fruits (except bananas) and prepare dressing up to 1 day in advance. Store separately and combine before serving.
  • Use only fresh, ripe fruit for best flavor and texture.
  • Gently toss the salad to avoid crushing softer fruits.
  • Maple syrup can be used instead of honey for a vegan version.
  • Do not use frozen fruit; it becomes too mushy when thawed.
