  • 2 pounds fresh apricots, washed, pitted, and chopped
  • 1 1/2 cups granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Wash the apricots thoroughly, cut them in half, remove the pits, and chop them into small pieces.
  2. Place the chopped apricots into a large saucepan.
  3. Add the sugar and lemon juice to the saucepan and stir to combine.
  4. Let the mixture sit for about 10–15 minutes so the apricots release their natural juices.
  5. Place the saucepan over medium heat and bring the mixture to a gentle boil while stirring.
  6. Reduce the heat and allow the jam to simmer for about 20–30 minutes, stirring frequently.
  7. As the jam thickens, skim off any foam that forms on the surface.
  8. Test the consistency by placing a small spoonful on a chilled plate; if it wrinkles slightly when pushed, it is ready.
  9. Stir in vanilla extract if using.
  10. Remove from heat, allow the jam to cool slightly, and transfer it into clean jars.
