  • 3 medium zucchini, sliced lengthwise
  • 3 ears corn, husked
  • 4 tbsp olive oil
  • 3 cloves garlic, minced
  • 3 tbsp fresh lemon juice
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup green onions, sliced
  • 1/2 cup crumbled feta cheese (optional)
  • Salt and black pepper to taste
  • Optional: 1 cup cherry tomatoes, halved
  • Optional: 1 avocado, diced
  • Optional: 1/2 cup chickpeas or grilled chicken for added protein

Instructions

  1. Bring a large pot of salted water to a boil and cook orzo until al dente, about 8–10 minutes. Drain and set aside.
  2. Preheat grill to medium-high heat.
  3. Brush zucchini slices and corn with olive oil.
  4. Grill zucchini for 3–4 minutes per side until tender and charred.
  5. Grill corn, turning occasionally, until lightly charred on all sides.
  6. Remove vegetables from grill, chop zucchini into bite-sized pieces, and cut corn kernels off the cob.
  7. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  8. In a large bowl, combine orzo, grilled zucchini, corn, basil, parsley, and green onions.
  9. Pour dressing over the salad and toss gently to combine.
  10. Add feta cheese and optional ingredients if using, then mix lightly.
  11. Taste and adjust seasoning before serving.
  12. Serve warm, at room temperature, or chilled.
