  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 3 ripe tomatoes
  • 1 garlic clove, minced
  • 2 tablespoons olive oil for salsa
  • 1 tablespoon red wine vinegar or lemon juice
  • 2 tablespoons chopped parsley or cilantro
  • 1 tablespoon diced red onion
  • Salt and pepper to taste

Instructions

  1. Pat steak dry and season with olive oil, salt, pepper, garlic powder, and paprika.
  2. Let steak rest at room temperature for 20 minutes.
  3. Grate tomatoes into a bowl and discard skins.
  4. Mix grated tomato with garlic, olive oil, vinegar, herbs, onion, salt, and pepper.
  5. Preheat grill to high heat and oil grates.
  6. Grill steak 3 to 5 minutes per side.
  7. Rest steak for 10 minutes.
  8. Slice thinly against the grain.
  9. Top with grated tomato salsa and serve.
