  • 1 1/2 pounds potatoes, cut into cubes or halves
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley or mixed herbs, chopped

Instructions

  1. Wash and cut the potatoes into evenly sized pieces.
  2. In a large bowl, combine olive oil, minced garlic, salt, black pepper, and chopped herbs.
  3. Add the potatoes to the bowl and toss until well coated.
  4. Lay a large sheet of aluminum foil on a flat surface.
  5. Place the seasoned potatoes in the center of the foil.
  6. Fold the foil edges together to create a sealed packet.
  7. Preheat the grill to medium heat.
  8. Place the foil packet on the grill and cook for 20 to 25 minutes, turning once halfway through.
  9. Carefully open the packet and check that the potatoes are fork-tender.
  10. Garnish with extra herbs and serve warm.

  • Cut potatoes into similar sizes to ensure even cooking.
  • Baby potatoes or red potatoes work especially well for grilling.
  • Seal the foil packet tightly so steam stays inside during cooking.
