  • 1 tbsp sugar
  • 1/2 cup cold butter (cubed)
  • 45 tbsp cold water
  • 34 ripe peaches (sliced)
  • 23 tbsp sugar (for filling)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • Optional: cinnamon or nutmeg
  • Optional: honey drizzle
  • Optional: chopped nuts

Instructions

  1. In a bowl, mix flour, salt, and sugar.
  2. Add cold butter and mix until crumbly.
  3. Add cold water gradually until dough forms.
  4. Wrap dough and refrigerate for 30 minutes.
  5. Slice peaches and mix with sugar, lemon juice, and cornstarch.
  6. Roll dough into small circles.
  7. Place peach filling in the center of each dough circle.
  8. Fold edges over the filling to form a rustic shape.
  9. Preheat grill to medium heat.
  10. Place galettes on foil or a grill-safe pan.
  11. Grill for 20–25 minutes until crust is golden.
  12. Remove, cool slightly, and serve.
