  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon lime juice
  • 1 large romaine head chopped
  • 4 cups mixed greens
  • 1 cup cherry tomatoes
  • 1 cucumber sliced
  • 1/2 red onion sliced
  • 1 avocado sliced
  • 1/2 cup corn
  • 1/2 cup black beans
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice

Instructions

  1. Coat chicken with olive oil, salt, pepper, garlic powder, cumin, paprika, and lime juice.
  2. Rest 10 to 15 minutes.
  3. Grill chicken until internal temperature reaches 165°F.
  4. Rest 5 minutes, then slice.
  5. Wash, dry, and chop greens and vegetables.
  6. Whisk dressing ingredients together.
  7. Add greens to bowl.
  8. Top with vegetables, chicken, avocado, corn, and beans.
  9. Drizzle dressing before serving.
