  • 2 cups cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup Kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the rotini pasta according to package directions until al dente.
  3. Drain the pasta and rinse under cold water to stop the cooking process.
  4. Transfer the cooled pasta to a large mixing bowl.
  5. Halve the cherry tomatoes.
  6. Dice the cucumber and bell peppers into bite-sized pieces.
  7. Thinly slice the red onion.
  8. Slice the Kalamata olives if desired.
  9. Add all vegetables and olives to the bowl with the pasta.
  10. In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and black pepper.
  11. Pour the dressing over the pasta mixture.
  12. Toss thoroughly until all ingredients are evenly coated.
  13. Gently fold in the crumbled feta cheese.
  14. Add the chopped parsley and mix lightly.
  15. Cover and refrigerate for at least 30 minutes before serving.
  16. Stir once more before serving and adjust seasoning if needed.
  17. Serve chilled.
