Giant strawberry shortcake biscuits are a classic summer dessert made with fluffy homemade biscuits, sweet macerated strawberries, and creamy topping, perfect for an easy and delicious treat.

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1/2 cup cold butter (cubed)
  • 3/4 cup milk
  • 2 cups fresh strawberries (sliced)
  • 23 tbsp sugar (for strawberries)
  • 1 cup whipped cream
  • Optional: vanilla extract
  • Optional: lemon zest

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix flour, baking powder, salt, and sugar.
  3. Add cold butter and mix until crumbly.
  4. Add milk and mix until a soft dough forms.
  5. Shape dough into large biscuit rounds and place on a baking sheet.
  6. Bake for 15–18 minutes until golden brown.
  7. Slice strawberries and mix with sugar. Let sit for 15–20 minutes.
  8. Slice biscuits in half once slightly cooled.
  9. Add strawberries and whipped cream to the bottom half.
  10. Top with the other half of the biscuit.
  11. Serve immediately.

Notes

  • Use cold butter for flaky biscuits.
  • Do not overmix the dough to keep biscuits tender.
  • Let strawberries sit to release juices for better flavor.
  • Assemble just before serving to avoid soggy biscuits.
  • Fresh strawberries give the best results.
