Garlic Butter Chicken and Potatoes Skillet is a flavorful one-pan meal featuring golden seared chicken, tender potatoes, and a rich garlic butter sauce. It’s comforting, easy to make, and perfect for busy weeknights.

Ingredients

  • Chicken (thighs or breasts) – juicy and seared for rich flavor
  • Baby Potatoes or Yukon Golds – tender and crispy, perfect for skillet cooking
  • Garlic (fresh minced) – adds bold, aromatic flavor
  • Butter – creates a rich, savory base for the sauce
  • Olive Oil – helps sear ingredients without burning the butter
  • Fresh Herbs (thyme, rosemary, parsley) – enhance aroma and finish
  • Chicken Broth (optional) – used to deglaze the pan or create light sauce
  • Lemon Juice (optional) – adds brightness and balances richness
  • Seasonings (salt, pepper, paprika) – essential for flavor depth

Instructions

  1. Wash and halve potatoes. Pat chicken dry and season with salt, pepper, and paprika.
  2. Heat butter and olive oil in a skillet over medium-high heat. Sear chicken until golden on both sides, then remove from skillet.
  3. Add more butter to the skillet and cook potatoes, covered, until golden and tender.
  4. Add garlic and herbs, cooking until fragrant. Optionally deglaze with broth or add lemon juice.
  5. Return chicken to the skillet and simmer until cooked through and coated in sauce.
  6. Turn off heat and let rest for 10 minutes before serving. Garnish with parsley or lemon zest if desired.

Notes

  • Use a cast iron or heavy-bottom skillet for best browning.
  • Add garlic late in the cooking process to avoid burning.
  • Do not overcrowd the pan—cook in batches if necessary.
  • Deglaze with broth or lemon juice for added depth of flavor.
  • Resting the dish allows flavors to meld and meat to retain juices.
