  • 1 lb calamari, cleaned and sliced into rings
  • 4 cups mixed lettuce or greens
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/4 cup thinly sliced red onion
  • 1/4 cup olives (optional)
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Clean and slice calamari into rings if not pre-prepared.
  2. Pat calamari dry with paper towels.
  3. Heat olive oil in a pan over medium-high heat.
  4. Cook calamari for 1–2 minutes until opaque, then remove from heat.
  5. Wash and chop lettuce, tomatoes, cucumbers, and onion.
  6. In a bowl, whisk olive oil, lemon juice, garlic, salt, and pepper.
  7. In a large bowl, combine vegetables and cooked calamari.
  8. Pour dressing over the salad and toss gently.
  9. Let sit for a few minutes, then serve fresh.
