  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 to 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk or buttermilk
  • 1 1/2 cups fresh mulberries
  • 1 tablespoon flour (for coating mulberries)

Instructions

  1. Preheat oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper.
  2. Rinse mulberries gently, remove stems, pat dry, and toss with 1 tablespoon flour to prevent sinking.
  3. In a medium bowl, whisk together 2 cups flour, baking powder, and salt.
  4. In a large bowl, beat softened butter and sugar until light and fluffy, about 2–3 minutes.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Gradually add dry ingredients to the butter mixture, alternating with milk. Begin and end with dry ingredients. Mix until just combined.
  7. Gently fold in the floured mulberries using a spatula.
  8. Pour batter into prepared pan and smooth the top evenly.
  9. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  10. Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Do not overmix the batter to keep the cake light and tender.
  • If using frozen mulberries, do not thaw completely and coat with flour before folding into batter.
  • If the cake browns too quickly, loosely cover with foil during the final baking minutes.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze wrapped tightly for up to 3 months for longer storage.
