Flavorful Cowboy Stir Fry is a bold and hearty one-pan dinner made with tender sliced beef, colorful vegetables, and smoky seasonings cooked quickly over high heat.

  • pounds beef sirloin or flank steak, thinly sliced against the grain
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon brown sugar

Instructions

  1. Slice the beef thinly against the grain and prepare all vegetables before cooking.
  2. Heat olive oil in a large skillet or on a Blackstone griddle over medium-high heat.
  3. Add beef in a single layer and cook undisturbed for 2–3 minutes to develop a sear. Stir and cook until browned. Remove from pan and set aside.
  4. In the same pan, add onions and cook for 2 minutes. Add bell peppers and mushrooms and sauté until tender-crisp.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Return beef to the pan. Sprinkle smoked paprika, chili powder, salt, and black pepper over the mixture.
  7. Pour in soy sauce, Worcestershire sauce, and brown sugar. Toss everything together and cook for another 2–3 minutes until heated through and evenly coated.
  8. Remove from heat and serve immediately over rice or your preferred side.

Notes

  • Do not overcrowd the pan to ensure proper browning.
  • Cook beef in batches if necessary for best sear.
  • Adjust spice level by increasing or decreasing chili powder.
  • If the mixture becomes too salty, add a splash of water or broth to balance.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
