Eyeball Brownies are a spooky Halloween dessert made with a rich fudge brownie base, topped with melted chocolate fudge and candy eyeballs. Perfect for parties, potlucks, and kid-friendly celebrations.

Ingredients

  • 1 box fudge brownie mix
  • 1/4 cup water
  • 1/3 cup oil
  • 1 egg
  • 2 cups semi-sweet chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1 teaspoon chocolate extract
  • Candy Eyeballs (as needed)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine the brownie mix, water, oil, and egg. Mix well until smooth.
  3. Line an 8×8 inch baking pan with foil or parchment paper and pour the batter in.
  4. Bake for 40 minutes or until a toothpick inserted comes out with moist crumbs.
  5. Let the brownies cool completely in the pan.
  6. In a double boiler or heatproof bowl over simmering water, melt the chocolate chips and sweetened condensed milk, stirring until smooth.
  7. Stir in the chocolate extract.
  8. Pour the chocolate fudge over the cooled brownies and spread evenly.
  9. Press candy eyeballs into the soft fudge layer before it sets.
  10. Let sit at room temperature for 2–3 hours until fully set before slicing and serving.

Notes

  • Use semi-sweet chocolate chips for a balanced sweetness.
  • Let brownies cool completely before adding fudge layer.
  • Candy eyes can be added immediately after spreading fudge.
  • Store in an airtight container at room temperature for up to 4 days.
  • Can be frozen without candy eyeballs and decorated after thawing.
