Edisto Tomato Pie is a classic Southern savory pie featuring juicy ripe tomatoes, fresh basil, green onions, melted cheese, and a creamy mayonnaise topping baked in a flaky pie crust.

  • 4 large ripe tomatoes, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh basil, chopped
  • 1/4 cup green onions, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3/4 cup mayonnaise

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place sliced tomatoes in a colander and sprinkle with salt.
  3. Allow tomatoes to drain for 30 minutes.
  4. Pat tomatoes dry thoroughly with paper towels.
  5. Prebake the pie crust for 10 minutes and let cool slightly.
  6. Arrange tomatoes evenly in the pie crust.
  7. Season with black pepper.
  8. Sprinkle basil and green onions over tomatoes.
  9. Mix cheddar cheese, mozzarella cheese, and mayonnaise in a bowl.
  10. Spread cheese mixture evenly over the tomato layer.
  11. Bake for 30-35 minutes until golden brown and bubbly.
  12. Remove from oven and cool for 10-15 minutes.
  13. Slice and serve warm.
