Ingredients

Scale
  • 4 cups ripe plums, halved and pitted
  • 1 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water (optional, for texture)

Instructions

  1. Wash, halve, and pit the plums. No need to peel.
  2. Combine plums, sugar, and lemon juice in a heavy-bottomed pot.
  3. Place over medium-high heat and bring to a boil.
  4. Reduce heat and simmer, stirring frequently.
  5. As plums soften, mash with a potato masher.
  6. Continue simmering for 35–45 minutes, stirring often.
  7. Use the cold plate test to check consistency.
  8. Skim foam if needed and remove from heat once thickened.
  9. Pour into sterilized jars, seal, and store accordingly.

Notes

  • No commercial pectin is required as plums are naturally high in pectin.
  • Can substitute sugar with coconut sugar or maple syrup.
  • Add vanilla or cinnamon for flavor variations.
  • Use frozen plums if fresh are unavailable—just thaw and drain first.
