Ingredients

  • 3 ripe peaches, sliced
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup toasted almonds or walnuts
  • 1/4 cup cucumber, thinly sliced
  • 2 tablespoons fresh basil or mint, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the peaches thoroughly, remove the pits, and slice them into thin wedges.
  2. Rinse and dry the mixed greens, then place them in a large salad bowl.
  3. Add the sliced peaches, cucumber, and chopped herbs on top of the greens.
  4. Sprinkle the crumbled feta cheese evenly over the salad.
  5. Add the toasted almonds or walnuts for crunch.
  6. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper to make the dressing.
  7. Drizzle the dressing over the salad just before serving.
