Easy Oven-Baked Cabbage Burgers with Ground Beef are juicy, low-carb burgers made with thick roasted cabbage slices instead of buns. This simple oven recipe delivers bold flavor and is perfect for a wholesome family dinner.

Ingredients

Scale
  • 1 large head green cabbage, sliced into 3/4-inch rounds
  • 1 1/2 pounds ground beef (80/20 recommended)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Remove outer cabbage leaves, rinse, and slice into 3/4-inch thick rounds.
  3. Brush both sides of cabbage slices with olive oil and sprinkle lightly with salt and pepper.
  4. Bake cabbage slices for 15 minutes until slightly tender but still firm.
  5. In a large bowl, combine ground beef, chopped onion, minced garlic, egg, salt, pepper, and paprika. Mix gently until combined.
  6. Divide the beef mixture into equal portions and shape into patties matching the size of the cabbage slices.
  7. Remove cabbage from oven and place one beef patty on each slice.
  8. Return to oven and bake for 18–22 minutes or until internal temperature reaches 160°F.
  9. During the last 5 minutes of baking, sprinkle shredded cheddar cheese over each patty and allow it to melt.
  10. Let rest for 5 minutes before serving.

Notes

  • Pre-roasting the cabbage helps prevent sogginess.
  • Use 80/20 ground beef for juicier burgers.
  • Avoid overmixing the meat to keep patties tender.
  • You can prepare patties up to 24 hours in advance and refrigerate.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze fully cooked burgers for up to 2 months.
