  • 1 cup red lentils, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can diced tomatoes (14 oz)
  • 1 can full-fat coconut milk (13.5 oz)
  • 2 cups vegetable broth
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon curry powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened.
  3. Add garlic and ginger and cook for 1 minute.
  4. Stir in turmeric, cumin, coriander, curry powder, garam masala, and paprika.
  5. Add tomatoes and cook for 3 minutes.
  6. Add rinsed red lentils.
  7. Pour in vegetable broth and coconut milk.
  8. Bring to a boil, then reduce heat.
  9. Simmer for 20–25 minutes until lentils are tender.
  10. Season with salt and pepper.
  11. Garnish with cilantro and serve with lime wedges.
