  • 2 large ripe peaches, peeled and diced
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Dice the peaches into small, even pieces.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the milk, egg, and vanilla extract.
  4. Combine the wet and dry ingredients just until moistened. Fold in the diced peaches.
  5. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or fryer to 375°F (190°C).
  6. Drop spoonfuls of batter into the hot oil, avoiding overcrowding. Fry 2–3 minutes per side until golden brown.
  7. Remove the fritters and let them drain on a paper towel-lined rack.
  8. In a small bowl, whisk the powdered sugar, milk, and vanilla extract to make the glaze.
  9. Drizzle glaze over warm fritters and serve immediately.
