A fresh, light, and flavorful summer salad made with crisp cucumbers, juicy tomatoes, creamy mozzarella, and fragrant basil, all drizzled with tangy balsamic vinaigrette. Perfect for BBQs, picnics, or a quick weeknight side.

  • 1 English cucumber, chopped
  • 8 oz fresh mozzarella pearls, drained
  • 2 cups grape tomatoes, halved
  • 1/3 cup fresh basil leaves, torn
  • 1/3 cup balsamic vinaigrette (or glaze)

Instructions

  1. Wash and slice the cucumber lengthwise, then quarter and chop into bite-sized pieces.
  2. In a medium bowl, combine cucumber, halved tomatoes, and mozzarella pearls.
  3. Gently toss ingredients together to evenly distribute.
  4. Add torn basil and drizzle with balsamic vinaigrette just before serving.
  5. Serve immediately or refrigerate until ready to serve.

  • Use English cucumbers for best texture and minimal seeds.
  • Store basil separately to prevent wilting.
