Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon coconut extract
  • 1 cup shredded coconut for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a sheet cake pan.
  3. Mix flour, baking powder, and salt.
  4. Cream butter and sugar until fluffy.
  5. Add eggs one at a time.
  6. Mix in vanilla and coconut extracts.
  7. Alternate adding dry ingredients and milk.
  8. Fold in shredded coconut.
  9. Pour batter into prepared pan.
  10. Bake for 30–35 minutes or until done.
  11. Cool completely.
  12. Beat cream cheese, butter, powdered sugar, and coconut extract until smooth.
  13. Spread frosting over cooled cake.
  14. Sprinkle with shredded coconut.
  15. Slice and serve.
