  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh key lime juice

  • 4 egg yolks
  • 1/2 cup coconut milk
  • 1 cup coconut cream
  • 2 tablespoons powdered sugar
  • 1/2 cup toasted coconut flakes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter.
  3. Press mixture into a 9-inch pie dish.
  4. Bake crust for 8 minutes and cool completely.
  5. Whisk together sweetened condensed milk, key lime juice, lime zest, egg yolks, and coconut milk.
  6. Pour filling into prepared crust.
  7. Bake for 15 minutes or until just set.
  8. Cool to room temperature.
  9. Refrigerate for at least 4 hours.
  10. Whip coconut cream with powdered sugar until fluffy.
  11. Spread over chilled pie.
  12. Garnish with toasted coconut flakes and serve.
