Instructions

  1. Wash the strawberries thoroughly and pat them completely dry.
  2. Remove the stems and carefully hollow out the centers using a small knife or melon baller.
  3. In a mixing bowl, beat the softened cream cheese until smooth.
  4. Add powdered sugar, vanilla extract, and heavy cream.
  5. Continue mixing until the cheesecake filling is light and creamy.
  6. Transfer the filling to a piping bag or zip-top bag with the corner cut off.
  7. Pipe the cheesecake filling into each prepared strawberry.
  8. Place the filled strawberries on a parchment-lined tray.
  9. Refrigerate for 30 minutes to firm up the filling.
  10. In a microwave-safe bowl, melt the chocolate chips and coconut oil together, stirring until smooth.
  11. Dip each cheesecake-filled strawberry into the melted chocolate, coating partially or fully as desired.
  12. Place the coated strawberries back on the parchment-lined tray.
  13. Immediately add graham cracker crumbs, sprinkles, nuts, or other toppings if using.
  14. Drizzle with melted white chocolate if desired.
  15. Refrigerate until the chocolate is fully set.
