  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix flour, baking soda, salt, and cinnamon.
  3. In another bowl, whisk sugar, brown sugar, oil, eggs, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in grated carrots.
  5. Spoon carrot cake batter into muffin cups, filling halfway.
  6. In a separate bowl, beat cream cheese until smooth, then mix in sugar, egg, and vanilla.
  7. Spoon cheesecake mixture over the carrot cake batter.
  8. Optionally swirl layers with a toothpick.
  9. Bake for 18–22 minutes until centers are set.
  10. Cool completely, then refrigerate for at least 2 hours before serving.
