Cabbage Roll Soup is a hearty one-pot comfort meal made with ground beef, tender cabbage, rice, and a rich tomato broth. Easy to prepare, family-friendly, and perfect for cozy dinners.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small head green cabbage, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked white rice
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 4 cups beef broth (alcohol-free)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning (optional)
  • 1 tablespoon brown sugar (optional, for balance)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.
  2. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Pour in diced tomatoes, tomato sauce, and beef broth. Stir to combine.
  4. Add salt, black pepper, paprika, and optional seasonings. Bring to a gentle boil.
  5. Stir in uncooked rice and chopped cabbage. Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until rice is tender and cabbage is soft.
  6. Taste and adjust seasoning. Add more broth if needed for desired consistency. Garnish with parsley and serve warm.

Notes

  • Rice continues to absorb liquid as it sits, so add extra broth when reheating.
  • For a lighter version, substitute ground turkey for beef.
  • To make it low-carb, replace rice with cauliflower rice.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • This soup freezes well for up to 3 months, though rice may soften after thawing.
