  • 1/2 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons sesame seeds (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Place the chicken breasts or chicken thighs into the crockpot.
  2. In a bowl, mix soy sauce, honey, brown sugar, minced garlic, grated ginger, and rice vinegar.
  3. Pour the teriyaki sauce mixture over the chicken in the crockpot.
  4. Cover and cook on low for 4–5 hours or on high for 2–3 hours until the chicken is tender.
  5. Remove the chicken and shred it using two forks if desired.
  6. In a small bowl, mix cornstarch with water to create a slurry.
  7. Stir the slurry into the crockpot sauce and cook for an additional 10–15 minutes until the sauce thickens.
  8. Return the chicken to the crockpot and mix well with the thickened teriyaki sauce.
  9. Serve the chicken over rice or with vegetables.
  10. Garnish with sesame seeds and sliced green onions before serving.
