Dorito Pasta Salad is a creamy taco-inspired pasta salad featuring seasoned ground beef, crunchy Nacho Cheese Doritos, black beans, corn, cheddar cheese, fresh vegetables, and a flavorful taco dressing. Perfect for potlucks, BBQs, parties, and family meals.

  • 12 ounces rotini pasta
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1/2 cup red onion, diced
  • 1 cup shredded lettuce
  • 3 cups Nacho Cheese Doritos, crushed
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons taco seasoning
  • 1 tablespoon lime juice

Instructions

  1. Cook rotini pasta according to package directions until al dente.
  2. Drain and rinse with cold water, then allow to cool completely.
  3. Brown ground beef in a skillet and drain excess grease.
  4. Add taco seasoning to the beef and prepare according to package directions.
  5. Allow the beef to cool.
  6. Whisk together sour cream, mayonnaise, taco seasoning, and lime juice to make the dressing.
  7. In a large bowl combine pasta, beef, tomatoes, corn, black beans, onion, and cheddar cheese.
  8. Pour the dressing over the salad and toss until evenly coated.
  9. Cover and refrigerate for 30 minutes.
  10. Just before serving, fold in crushed Doritos and shredded lettuce.
  11. Add optional toppings if desired.
  12. Serve immediately.

  • Add Doritos immediately before serving to keep them crunchy.
  • Use freshly shredded cheese for the best texture.
  • Ground turkey or chicken can replace beef.
