Damn Good BLT Pasta Salad is a creamy, flavorful dish packed with crispy bacon, fresh lettuce, juicy tomatoes, and tender pasta, perfect for picnics, BBQs, and easy meals.

  • 12 oz rotini pasta
  • 8 slices bacon, cooked and crumbled
  • 2 cups cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/4 cup red onion, finely chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions.
  2. Drain the pasta and rinse under cold water to cool completely.
  3. Cook the bacon in a skillet or oven until crispy, then transfer to paper towels and crumble.
  4. In a bowl, whisk together mayonnaise, Greek yogurt or sour cream, Dijon mustard, vinegar or lemon juice, garlic, salt, and pepper.
  5. In a large mixing bowl, combine cooled pasta, bacon, and tomatoes.
  6. Pour the dressing over the mixture and toss until evenly coated.
  7. Add chopped lettuce and optional ingredients just before serving and gently mix.
  8. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Add lettuce just before serving to keep it crisp.
  • Reserve some dressing to refresh the salad before serving.
  • Use whole wheat or gluten-free pasta if needed.
  • For extra flavor, add a small amount of bacon grease to the dressing.
