  • 5 large tomatoes, cut into quarters
  • 1 English cucumber, peeled and sliced
  • 1/2 large red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon kosher salt
  • 1 pinch black pepper
  • 1 garlic clove, finely minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon honey or sugar (optional)

Instructions

  1. Wash and cut the tomatoes into quarters and place them in a large bowl.
  2. Peel and slice the cucumber, then add it to the bowl with the tomatoes.
  3. Thinly slice the red onion and add it to the vegetables along with parsley and cilantro.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, salt, black pepper, minced garlic, oregano, and honey if using.
  5. Pour the dressing over the vegetables.
  6. Gently toss until everything is evenly coated.
  7. Cover and let the salad rest for 10 to 30 minutes to allow flavors to meld.
  8. Stir lightly before serving and adjust seasoning if needed.

  • Soaking red onion in cold water can reduce sharpness.
