Cucumber Caprese Salad is a fresh and refreshing twist on the classic Italian caprese, made with crisp cucumbers, juicy tomatoes, creamy mozzarella, fresh basil, and a light olive oil dressing. It is perfect as a summer side dish or light meal.

Ingredients

Scale
  • 2 large English cucumbers, sliced
  • 2 cups cherry or grape tomatoes, halved
  • 8 oz fresh mozzarella balls or log, sliced or torn
  • 1/4 cup fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze (optional)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash the cucumbers and tomatoes thoroughly.
  2. Slice the cucumbers into even rounds or half-moons.
  3. Halve the cherry tomatoes or cut larger tomatoes into bite-sized pieces.
  4. Place cucumbers, tomatoes, and mozzarella into a large bowl.
  5. Drizzle olive oil evenly over the salad.
  6. Season with salt and black pepper.
  7. Gently toss to combine without breaking the mozzarella.
  8. Top with fresh basil leaves and drizzle balsamic vinegar or glaze if using.
  9. Serve immediately or let rest for 10 minutes to allow flavors to meld.

Notes

  • Use high-quality olive oil for the best flavor.
  • Pat cucumbers dry after slicing to prevent excess moisture.
  • Add basil just before serving for maximum freshness.
  • Best enjoyed within 24 hours.
