A crisp and refreshing cucumber and bell pepper salad made with fresh vegetables and a tangy dressing, perfect as a light and healthy side dish.

Ingredients

  • 3 large cucumbers, thinly sliced
  • 3 bell peppers (red, yellow, orange), thinly sliced
  • 1/2 red onion, thinly sliced (optional)
  • 1/3 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons honey or sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley or dill, chopped (optional)

Instructions

  1. Wash and thinly slice cucumbers into rounds or half-moons.
  2. Slice bell peppers into thin strips.
  3. Thinly slice red onion if using.
  4. In a bowl, whisk together vinegar, olive oil, honey or sugar, salt, and pepper.
  5. Add all vegetables to a large bowl.
  6. Pour dressing over vegetables and toss well to combine.
  7. Let the salad sit for 15–30 minutes to allow flavors to blend.
  8. Garnish with fresh herbs if desired and serve.
