Crockpot Pineapple BBQ Chicken is an easy slow cooker recipe made with tender chicken, sweet pineapple, and rich barbecue sauce. This simple dish creates a sweet and savory meal perfect for serving over rice, in sandwiches, or with vegetables.

  • 2 pounds boneless skinless chicken breasts or chicken thighs
  • 1 1/2 cups barbecue sauce
  • 1 can (20 ounces) pineapple chunks, drained (reserve 1/4 cup juice)
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped green onions (optional garnish)

Instructions

  1. Place the chicken breasts or chicken thighs in the bottom of the crockpot.
  2. In a bowl, mix the barbecue sauce, reserved pineapple juice, garlic, brown sugar, black pepper, and paprika.
  3. Pour the sauce mixture over the chicken.
  4. Add the pineapple chunks on top.
  5. Cover the crockpot and cook on low for 4–6 hours or on high for 2–3 hours.
  6. Once the chicken is fully cooked and tender, remove it from the crockpot.
  7. Shred the chicken using two forks.
  8. Return the shredded chicken to the crockpot and mix it with the pineapple BBQ sauce.
  9. Allow it to cook for an additional 10 minutes so the chicken absorbs the sauce.
  10. Serve warm over rice, in sandwiches, or with vegetables and garnish with green onions.

  • Chicken thighs stay extra tender during slow cooking.
  • Use your favorite barbecue sauce for different flavor variations.
  • If the sauce becomes too thin, cook uncovered for the final 10 minutes.
