  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach (optional)

Instructions

  1. Season the chicken breasts with salt and black pepper.
  2. Place the chicken in the bottom of the crockpot.
  3. In a bowl, whisk together heavy cream, chicken broth, olive oil, minced garlic, parmesan cheese, and dried herbs.
  4. Pour the creamy mixture over the chicken in the slow cooker.
  5. Add chopped sun-dried tomatoes on top of the chicken.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. About 20 minutes before serving, stir in fresh spinach if using.
  8. Spoon the creamy sauce over the chicken before serving.
  9. Serve warm with rice, pasta, or vegetables.

Notes

  • Chicken thighs can be used instead of chicken breasts for extra juiciness.
  • Cooking on the LOW setting produces the most tender results.
  • If the sauce becomes too thick, add a little extra chicken broth.
  • Fresh herbs can be added at the end for additional flavor.
